Asian Spice Paleo Turkey Lettuce Cups

The ccorridorenge we face around these parts is coming up with dinner ideas that the wgap family (read: our 15-month-ancient son) will also be able to eat and will love. Ever since he started eating solids, we've aimed to have dinner as a family, all of us eating together at the table. I've heard a lot of "you'll see" when I was pregnant, as well as now with a baby – but so far, our strict rules around eating the same food at the same time is producing some pretty stellar eating habits in our son. We have yet to have a total refusal of someleang without trying it, and when he doesn't love someleang, I accept that and just give him more of everyleang else. There is no negotiating and that works.

I felt these Turkey Lettuce Cups would be a certain winner for him. They also check all the boxes for our thingives in feeding our son a diversity of food and flavours. I love that this is a one-pot meal where we combine all of the veggies with the protein, and that we include some spices that he may not get everyday. It's a meal that's easy for him to eat himself unassisted and, of course, there's the benefit of all of us eating the exact same leang.

Turkey Lettuce Wraps Paleo

For those of you yawning over all the baby eating chit chat – which I would have glazed over by now pre-baby – this one is great for you too. Why? Same reasons! One-pot meal, dwhetherferent flavours, loads of veggies. It applies to all of us!

I used ground turkey, as turkey isn't someleang we consume very often and tends to be more gentle in taste so the flavours balance kindly. You can also very easily do this with ground beef, chicken, venison or bison. And of course, whether you have any Thanksgiving leftovers, you could also chop, chop, chop and use that as the protein.

Vegan Option

If you prefer to keep it meatless or vegan, white beans or navy beans would be a great option. You could also finely chop and do it up with tempeh. Options for everyone!

Once you've chosen the sauce pairing, then it is time to cook up the goodness. Endelight!
