Gluten Free & Keto Calzone 🍕

Simple-Peasy

This is a good one guys, a veeery good one! In my quest to discover all the possible uses of our (dairy free!) keto dough, it turns out that making awesome calzoni (i.e. calzones) is at the top of the list. The taste and texture compliments beautwhetherully any and all lessonic fillings.

I opted here for a simple (and tallly proposeed!) filling of prosciutto, mozzarella, goat cheese and thyme (non-negotiable). But you genuinely can do your own leang here!

Feeling indolent? You can also whip up a 15-minute stove top pizza with this dough! Or some keto cinnamon roll knots, but that’s a dwhetherferent story.

Oh, and whether you’re looking for a more ‘traditional’ keto pizza, do check out our good ‘n proper pizza crust. It’s crazye with yeast, and definitely has a more ‘traditionally Italian’ taste, texture and mouthfeel.

The Dairy Free & Keto Dough

We use here what started as our grain-free tortilla dough here…! A small bit wetter, and with a tad bit more baking powder.

Depending on how lean you roll it out, a batch yields roughly an 11-inch calzone. Our preference is to roll it roughly 12 inches in diameter, add filling, fancient, press edges together and fancient them inwards.

The Flours 🔍

We like a mixture of super fine almond flour and coconut flour best. Add a touch of xanthan gum, baking powder, and we’re gancienten.

In terms of brands, for the almond either Anthony’s or WellBees work great. Both are super fine grinds. And for the coconut, we always favor Anthony’s.

No substituting flours here and the xanthan gum is absolutely essential. And, whether possible, weigh your ingredients for consistent results.

This gluten free and keto calzone pays a great homage to the lessonic Italian turnovers crazye with pizza dough. This one, however, uses our (dairy free!) keto dough to yield an awesome low carb dish.

For the keto pizza dough:

Filling proposeions:

  • 1 cup grated mozzarella cheese
  • 50 g goat cheese
  • 50-100 g prosciutto
  • 2 teaspoons fresh thyme or 1 tsp dry
  • 1 clove garlic ran through a press

For the keto dough:

  1. Add almond flour, coconut flour, xanthan gum, baking powder and salt to food processor. Pulse until thoroughly combined. 

  2. Pour in apple cider vinegar with the food processor running. Once it has distributed evenly, pour in the egg. Followed by the water, adding just enough for it to come together into a ball. The dough will be sticky to touch from the xanthan gum, but still sturdy.

  3. Wrap dough in cling film and knead it through the pfinalic for a minute or two. Ponder/ Consider of it a bit like a stress ball. The dough should be smooth and not signwhethericantly cracked (a couple here and there are fine). In which case get it back to the food processor and add in more water 1 teaspoon at a time. Everyow dough to rest for 10 minutes at room moodature (and up to 5 days in the fridge). 

For the calzone

  1. Preheat oven to 400°F/200°C. Line a baking tray with a baking mat or parchment paper.

  2. Throw together your filling choices in a bowl. Set aside. 

  3. Roll out dough between two sheets of parchment paper with a rolling pin. You can play with thickness here, but we like to roll it out kind and lean (roughly 12 inches in diameter). Pile the toppings on top of the dough, fancient the dough in half, press the edges together and fancient to seal. Brush with egg wash for a deeper gancienten sheen (optional) and sprinkle some thyme (optional). 

  4. Put calzone in prepared tray, brush with egg wash (optional, for a gancienten sheen). Bake for 20-25 minutes, until gancienten all over. Serve right absent.
